But first let me tell you a little bit about Mexican gastronomy and its history;
Mexican cuisine is the result of thousands of years of history, passed down from generation to generation. From Mesoamerican, pre-Hispanic and Aztec gastronomy… Until reaching the contemporary Mexican cuisine, it has been transformed, merged and evolved thanks to its different influences.
In 2010, Mexican gastronomy was declared Intangible Cultural Heritage of Humanity by UNESCO. A recognition for a wide and diverse cuisine, thanks to this distinction, Mexican gastronomy is taking an enormous importance and the eyes of the whole world are turning to Mexican dishes, as it is part of a legacy and a rich heritage of thousands of years of cuisine from the different regions of the country.
The history of Mexican gastronomy is perhaps one of the most varied and interesting in the world. Throughout time, Mexico has been influenced by many cultures and regions, and its cuisine has evolved over the centuries.
Tacos, tamales, pozole, mole… Mexican cuisine and its history has a worldwide reputation. But this culinary tradition has not been built from one day to the next, it has a long history.
Even though Mexico has a wide variety of ingredients, there are some that are a characteristic of ancient Mexican cuisine, whether for their flavor, the ease of their production or even for cultural and religious reasons, these ingredients have been stamped in the Mexican soul, those are;





Is the heart and soul of our gastronomy since it is the base of a great amount of dishes that can go from a handmade tortilla, or even become a great gift for the palate wrapped in its own leaf, it is enough to open that natural wrapper that is called tamale to fill all your senses with joy. This beautiful gift is a legacy of our ancestors and today, it continues to be a favorite among young and old.
The nopal cactus is a symbol of our country since it is present in our national flag. The Nahuatl civilization was in charge of showing us its delicious flavor and excellent nutritional value. This cactus has approximately 200 species, 101 of them live in Mexico and 68 are endemic; its use is very extensive since it goes from companion to protagonist of salads and main member in juices and dishes.
A fundamental companion of corn is the bean, as it is said to be present in 60% of Mexican recipes. Of the 150 species in the world, 50 of them can be found in Mexico, perhaps this explains its constant appearance in the history of our cuisine.
It is a fruit considered a gift from our country to the rest of the planet; for its delicate flavor it has become one of the most valued ingredients around the world. Its creamy and delicate consistency is perfect to accompany almost anything.
Mexicans love the spiciness it produces and the unique touch it gives to our food; in Mexico we have a great variety of chili peppers to which you can give endless uses. If we go back to the past we will discover that the Aztecs not only used it as part of their diet, they gave it a diversity of uses ranging from military to medicinal.
